Kabsa is a popular rice dish from Saudi Arabia, typically made with chicken, lamb, or beef, along with an array of spices and herbs. The dish is known for its distinctive flavor, which comes from the use of fragrant spices like cumin, coriander, and cardamom.
Ingredients:
- 2 cups of basmati rice
- 4 chicken thighs
- 2 chopped onions
- 3 minced garlic cloves
- 3 chopped tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon black pepper
- 1 teaspoon cinnamon powder
- 1 teaspoon cardamom powder
- 3 bay leaves
- 3 cloves
- Salt to taste
- 4 cups of chicken broth
- Pinch of saffron
- 2 tablespoons of butter
Instructions:
- Rinse the rice and soak it in cold water for about 30 minutes.
- Heat the butter over medium-high heat in a large pot and sauté the onions and garlic until they are soft and translucent.
- Add the chicken pieces and brown them on both sides.
- Add the chopped tomatoes, tomato paste, and all the spices, and stir for a few minutes until fragrant.
- Add the rice to the pot and stir until it is coated with the spices and oil.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the rice is cooked through.
- About 5 minutes before the end of the cooking time, dissolve the saffron in a tablespoon of warm water and then add it to the pot, stirring gently to combine.
- Remove the pot from the heat and let it rest for about 10 minutes before serving.
- Serve hot, and enjoy!
